Peel and devein the shrimp, leaving the tails on if desired. Keep the shells and heads if available because they can add extra seafood flavor to the broth.
Blend tomatoes, onion, garlic, dried guajillo chiles, chipotle pepper, and a little water until smooth.
Heat olive oil in a large pot over medium heat. Add carrots and potatoes and cook for 3–4 minutes.
Pour in the blended tomato-chile mixture and chicken or seafood broth. Add oregano, cumin, salt, and black pepper.
Bring the soup to a gentle boil, then reduce the heat and simmer for 15–20 minutes until the potatoes and carrots are tender.
Add the shrimp and simmer for about 4–6 minutes, just until they turn pink and opaque. Avoid overcooking.
Stir in fresh cilantro and lime juice. Taste and adjust the salt and chile seasoning.
Ladle the hot Caldo de Camarón into bowls and garnish with fresh cilantro, lime wedges, avocado, and sliced jalapeños.
Add extra chipotle or fresh serrano peppers for more heat.
Add white fish, crab, mussels, or clams along with the shrimp.
Add zucchini, celery, or corn for extra vegetables.
Add additional fresh tomatoes for a richer tomato flavor.
Allow the soup to cool before transferring it to an airtight container.
Refrigerate for up to 3 days.
Reheat gently over medium-low heat until hot. Avoid boiling for too long because the shrimp can become tough.
Freezing is not recommended for the complete soup because shrimp and potatoes can change texture after freezing.
For better results, freeze the broth and vegetables separately and add freshly cooked shrimp when reheating.
