Remove the stems and seeds from the guajillo and ancho chiles.
Toast them briefly in a dry skillet over medium heat, being careful not to burn them. Soak them in hot water for about 10 minutes until softened.
Blend the softened chiles with garlic, onion, vinegar, cumin, oregano, cloves, cinnamon, salt, and a little soaking water until completely smooth.
Place the lamb or pork pieces in a large bowl. Pour the adobo over the meat and mix until every piece is well coated.
Cover and refrigerate for at least 2 hours, or overnight for deeper flavor.
