Socca is a traditional French specialty from Nice, made with a simple batter of chickpea flour, water, olive oil, and seasoning. Baked at high heat until golden and slightly crisp around the edges, this rustic Provençal flatbread has a tender center and a delicious nutty flavor.
Popular throughout the French Riviera, Socca is traditionally enjoyed hot and freshly baked with plenty of freshly ground black pepper. It makes a wonderful appetizer, snack, or side dish and pairs beautifully with salads, soups, and other Mediterranean-inspired meals.

Whisk the chickpea flour, water, olive oil, salt, and black pepper together in a large bowl until smooth and free of lumps.
Cover the bowl and allow the batter to rest for about 30 minutes. This helps the chickpea flour fully absorb the liquid.
Place a large oven-safe skillet or baking pan in the oven and preheat it at a high temperature until very hot.
Carefully remove the hot pan and add olive oil, coating the bottom evenly.
Pour the rested batter into the hot pan, creating a thin, even layer.
Bake until the Socca is firm, golden, and crisp around the edges.
If needed, place the Socca briefly under the broiler to create extra golden spots on the surface.
Sprinkle with additional black pepper and fresh herbs, then cut into wedges and serve immediately while hot.
Add finely chopped fresh rosemary to the batter for extra Mediterranean flavor.
Top the batter with very thin slices of onion before baking.
Add thyme, parsley, or other fresh herbs to the batter.
Add a small pinch of chili flakes for gentle heat.
Socca is best enjoyed immediately after baking.
If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat in a hot oven or skillet to help restore the crisp texture.
Socca can be frozen for up to 1 month, although its texture is best when freshly baked.
Allow it to cool completely, wrap tightly, and store in a freezer-safe container. Reheat directly in a hot oven until warmed through and crisp.
